The hypolipidemic and antioxidant effects of anthocyanins from black soybean skin were studied.The results showed that the anthocyanins from purple sweet potato have inhibition of spleen index,liver index and can enhance heart index.The levels of serum lipids TC,TG,LDL-C,Apo B,atherosclerosis index and the content of MDA in liver were decreased.The serum HDL-C,Apo AI and the activity of SOD in liver were improved.Therefore,anthocyanins from black soybean skin have significantly hypolipidemic and antioxidant effects.
