Research progress on application, preparation process and quality standard of cerebroprotein hydrolysates

Abstract

Abstract: Cerebroprotein hydrolysate is a mixture of polypeptides and amino acids obtained from porcine brain after enzymatic hydrolysis and filtration. Cerebroprotein hydrolysate can exert neurotrophic activity on neurons in the peripheral or central nervous system, and has a good effect in the adjuvant treatment of various neurodegenerative diseases. This review mainly introduced the application, preparation process and quality standards of cerebroprotein hydrolysate, which provided a reference for further improving the production process of cerebroprotein hydrolysate and developing new oral products.
