Preparation and characterization of glutamate iron chelate

Abstract: Glutamic acid(Glu)was reacted with trivalent iron ions(Fe3+)to prepare glutamate iron chelate [Glu-Fe(Ⅲ)]. Glu-Fe(Ⅲ)was characterized by FT-IR, DSC, and TGA analysis. The Fe3+ content in Glu-Fe(Ⅲ)was determined by an indirect iodometric method and identified as an evaluation index for optimizing the preparation condition of Glu-Fe(Ⅲ). The effects of molar ratio of glutamic acid to iron, pH, time and temperature on the iron content of Glu-Fe(Ⅲ)were investigated by single factor method and Box-Benhnken design(BBD). The optimum preparation condition of Glu-Fe(Ⅲ)was Glu/Fe3+ molar ratio of 3∶5, pH 4.8, 50 ℃ and 3 h, and the iron content of Glu-Fe(Ⅲ)prepared under the optimized conditions was 19.91%. Glu-Fe(Ⅲ)could be a new iron and glutamic acid nutrient supplement.
