Study on maize starch pasting by asymmetrical flow field-flow fractionation

Abstract: The effect of sodium hydroxide(NaOH)dissolution method and dimethyl sulfoxide(DMSO)dissolution method on the conformation of maize starch was investigated.The dissolved maize starch was separated and characterized by asymmetrical flow field-flow fractionation(AF4)coupled with multiangle light scattering(MALS)and differential refractive index(dRI)detectors.Meanwhile, the morphology and conformation of the maize starch gel was characterized by scanning electron microscopy(SEM), X-ray diffraction(XRD), attenuated total reflection Flourier transform infrared spectroscopy(ATR-FTIR)and differential scanning calorimetry(DSC).The results revealed that the amylose-lipid complex can be disassociated by NaOH dissolution method, which makes the data(i.e.size and molar mass distributions)from AF4-MALS-dRI more accurate.
